
In my efforts to eat healthier, I've been trying to eat at least one raw meal each day. It's easiest to do for breakfast usually, because I can just toss some leafy greens and fruit in the blender to make a delicious green smoothie. But lately I've also been making a lot of guacamole and dipping crunchy vegetables into it for a raw lunch. My measurements aren't even close to precise, since I tend to just use whatever amounts of ingredients I have in the kitchen that day. But here's my standard recipe for guacamole:
2-3 avocados, peeled and pitted
2 tomatoes, quartered (roma are great, but I've had campari tomatoes in my fridge this week and they work just as well)
1/3 white onion
light handful of cilantro leaves
sea salt
pepper
I just toss all the ingredients into my amazing food processor


And as I said, I love making green smoothies. Today I was running errands after my morning class and decided to stop by a coffee shop/health food store I keep meaning to check out. I got their green smoothie and...loved it! I don't use parsley in mine, but they do and it definitely added some fun flavor. I might have to try it at home next week.

Now I'm off to the gym to get in a much-needed workout. I've definitely been slacking on working out since my summer classes started and I just don't feel as healthy or energetic without a good sweaty workout session!

I've been wanting to go completely raw- at least for a while. But I havnt committed yet... I will! I can! Haha! These both look and sound delicious!

ReplyDeleteI need a food processor!! I keep hearing about them and it sounds so fun and easy. I use my blender a lot for smoothies, but for bigger jobs, a food processor definitely sounds like the way to go.
