
Continuing our tradition of having homemade soup on Sundays, I wanted to make something comforting and filling today. Living in Idaho means I always have a large bag of delicious local potatoes in our pantry, so cream of potato was the perfect solution. As usual, I added a bunch of ingredients to a pot, seasoned them, and counted on the fact that it's pretty much impossible to ruin a soup. My experiment turned out perfectly, and we each had a huge bowl of soup for dinner. This is definitely a wonderful comfort soup for a gray, snowy day.
Creamy Potato Soup Recipe
5 tbsp butter
1 onion
1 stalk celery
1 carrot
4 tbsp flour
1 box chicken broth
2 cups milk
5 red potatoes
thyme
worcestershire sauce
salt and pepper
1/4 cup cream cheese
cheddar cheese and bacon bits (for topping soup)
Dice the onion, celery, and carrot. Chop the potatoes into 1/2 inch pieces. Melt the butter in a large pot, then stir in the onion, celery, and carrot, cooking until they begin to soften. Add the flour and stir constantly for two minutes. Pour the chicken broth and milk into the pot. Then add the potatoes, a sprinkle of thyme, salt and pepper, and a few drops of worcestershire sauce. Bring the soup to a light boil, let cook uncovered for 30 minutes, or until the potatoes are soft. Stir in the cream cheese; continue to stir until it's completely melted and mixed in with the soup. Serve with grated cheddar cheese and bacon bits on top.

I'm assuming the "5 red tomatoes" should be potatoes? ;)

ReplyDeleteYummy. The very first time my husband ever made us potato soup, he cooked the potatoes too long and it ended up being more like mashed potato soup. It was too yummy to complain, though.

ReplyDeleteI used to ascribe to the view that it was impossible to ruin a soup too. That was until the day I managed to blitz half a lemon that had got thrown in with some chicken stock into a batch of vegetable soup. There was no flavour in there to counteract the fierce citrus tones. In the end there was no saving it...
